About five and half years ago, right afer I had my first son, I truly did not know how to cook. I pretty much cooked baked chicken every night for months until we began to grow feathers and cluck like chickens (ok we didnt turn into chickens but we were very close to it!). I grew up dinning at Mexican Restraunts pretty much every week and also grew a strong love for mexican food, so it was only inevitable that I learn to cook the delicious food myself. When I was taught this recipe, it was like I had hit the lotto, I was seeing gold! No more clucking like chickens we had finally moved onto BEEF! This recipe is an absolute favorite in our home and I hope your family enjoys it as much as mine.
Ingredients:
1lb. ground beed (can be replaced by ground turkey or chicken)
1tbs minced garlic
canola oil (or whatever oil you want to use)
1tbs cumin
4 oz water
1 small onion diced
1 8 oz can tomtoe sauce
10-12 corn tortillas
1 pkg. shredded lettuce
1 large tomatoe diced
Sautee both onions and minced garlic in oil until onions become almost transparent. Add in ground beef and cumin until meat is cooked completely through. Next, add tomatoe sauce and water and set to simmer for 15-20 minutes. (Do not allow to over simmer because the meat will dry out. If this happens just add a little bit of water.)
In a small pan heat 2 ounces of cooking oil. Once oil has become hot, lay one tortilla inside oil allowing it to slightly fry, flip over and fold in half cooking both sides evenly. Set aside and repeat until all tortillas have been cooked.
To serve, garnish each taco with leattuce and diced tomatoes. (Some add cheese and sourcream as well)
We always eat refried beans with our delicous tacos and of course these can be found in your local grocery store.
